SHAKSHUKA
Shakshuka is a delicious, tasty dish that works well for breakfast, lunch, or dinner. This version with spinach, peppers, and onions gives extra nourishment and taste to the dish.
INGREDIENTS:

2 tablespoons extra virgin olive oil

1 onion, chopped

2 bell peppers (red or yellow), chopped

3 cloves garlic, minced
-
100 g fresh spinach, roughly chopped

1 teaspoon cumin
-
1 teaspoon paprika (sweet or smoked)

1 teaspoon curry powder (optional, for extra flavor)

1 can stewed tomatoes (around 400 g)

4 eggs
-
salt and pepper to taste
FOR SERVING:

Fresh cilantro, chopped (parsley, or other fresh herbs of your liking)
Method:

Chop the onions, peppers, garlic and spinach.

Heat the olive oil in a frying pan (preferably with a lid) over medium heat.

Add the onions and peppers, and cook until soft.

Add the garlic, cumin, paprika, and curry powder, if using.

Stir well and let simmer for a minute to release the flavors.

Put the chopped spinach in the pan and cook until wilted.

Pour the canned tomatoes over the vegetables and stir gently.

Let it simmer for 5-10 minutes to thicken the sauce.

Make small wells in the sauce with a spoon, and crack an egg in each well. Be sure to distribute the eggs evenly.

Cover the pan and let the eggs soak in the sauce for approximately 5-8 minutes, or until the egg yolk is cooked according to your preference.

Sprinkle salt, pepper, and freshly chopped cilantro or parsley over the dish.

This shakshuka is a great source of fiber as well as folate, vitamin C, vitamin K and vitamin A. With the added spinach you also get a dose of Polyphenols.
