BAKED AVOCADO EGG
This recipe gives you a filling and nutritious breakfast or lunch with the combination of healthy fats from the avocado and protein from the eggs. Feel free to season with different herbs for extra freshness and aroma.
Ingredients

1 large avocado, ripe

2 eggs
-
fresh herbs to your liking (for example, chopped parsley, dill or chives)

salt and pepper to your liking

any additional spices or seasonings as desired (for example, paprika powder or chili flakes)
Method

Put the oven on the grill function and let it preheat.

Cut the avocado in half and carefully remove the stone. You can also spoon out some of the avocado flesh to make room for the egg.

Place the avocado halves on a baking sheet so that they are stable.

Crack an egg into each of the avocado holes. Be sure to keep the yolk intact.

Sprinkle fresh herbs over the eggs and avocado. Also add salt and pepper to taste, as well as any additional spices you wish to use.

Place the baking sheet with the avocado and egg under the preheated grill. Cook until the eggs are cooked to your preferred consistency. This usually takes 5-7 minutes, depending on the oven and the desired cooking time for the eggs.

Carefully remove the avocado and egg from the oven. Serve immediately.
